Quick Cheesecake Bites


Have you ever had a knock on the door from a friend who's just 'popping' around but they end up staying for at least 3 hours? And all you have is a selection of half eaten cheeses and a couple of tim tams? Well not anymore! Well kind of, you will still have to serve the cheese- OR skip straight to dessert! I have come up with a quick little recipe that you can make in advance and keep in the freezer to wow that unexpected guest. 


I don't think I can consider this a recipe because it's so damn easy but here you are reading it so I take it someone wants to know how to do this! This 2 ingredient treat is something you can whip up in no time and store for a lifetime (not really). Moving on to the 'recipe'...


Quick Cheesecake Bites

Ingredients
- 1 store bought frozen cheesecake (I like to use the Sara Lee French Vanilla one)
- 1/2 packet of plain biscuits

Method
Defrost your cheesecake according to serving instructions. Flip it out of the packaging so the base is on the top. 

Remove the biscuit base from the cheesecake, placing the cheesecake filling in a large bowl and the base in another. Depending if your cheesecake has a large base, you may need to add a few biscuits to the base bowl. 


Crush up the biscuit base and biscuits in the bowl and set aside. 


Whip the cheesecake filling until creamy. Spoon tablespoons, shaping with your spoon to create balls or quenelles. 


Place the cheesecake balls/quenelles in the bowl with the biscuit crumb and toss to coat.


Transfer to a prepared baking sheet and place in the freezer to firm up.


Once frozen, either serve or place in an airtight container for later use.




There it is, super simple and bound to impress your unexpected guests!
