3 Ingredient Classic Vanilla Gelato

It is now summer here in the Southern Hemisphere and a defining factor of Australia's climate is that it is bloody hot! I've lived here all my life but nothing ever prepares me for how hot the summer is going to be. Just coming out of spring (which is hotter than the English summer) means it's just about to get a hell of a lot hotter. I have some up coming blog posts to help everyone keep their cool but for now I am starting off with the most simple gelato recipe you could ever come across. It's so easy and it doesn't take long at all, the only real wait is when you pop it in the freezer to set but other than that it's perfect to make in the morning and enjoy on a hot afternoon. 

With just 3 ingredients taking around 5 minutes to whip up you can get out of the hot kitchen and straight under the air conditioning as soon as possible. This recipe is so versatile, you can add anything to it to make it your own or keep it stripped back with my favourite - the classic vanilla (nothing beats it!).

Enough blabbering. Here's the recipe!

Classic Gelato

Ingredients 

500ml double cream

1 x 395g tin condensed milk

2 tsp vanilla extract

Any other ingredients you would like (chopped nuts, chocolate shavings Ect.)


Method

1. Beat all the ingredients together with an electric mixer until the mixture forms soft peaks. Be careful to not over beat. 

2. Place in a freezable container to freeze for at least 4-5 hours. 

3. Remove 10-15 mins before serving or until it reaches the softness you like (in the Australian heat you'll probably only need to 3 seconds before).

4. Enjoy!


Tip:

30 minutes before you go to make the gelato, put all ingredients in the fridge to cool rather than the pantry
