Ingredients
3 Medium Bananas (mashed)
½ C Light Flavoured Olive Oil Spread, melted
¾ C Brown Sugar
¼ C Water (you can use a Flax Egg if preferred)
1 tsp Vanilla Extract
1 tsp Baking Soda
¼ tsp Salt
1 C Plain Flour
½ C Cocoa Powder
1 C Vegan Chocolate Chips (I used dark)
Method
1. Preheat oven to 180°C.
2. Lightly spray a loaf tin using olive oil spray and line the bottom with baking paper.
3. In a large bowl add bananas, melted olive oil spread, brown sugar, vanilla and water (or flax egg).
4. Sift flour, cocoa, salt and baking soda using a fine sieve and add to bowl with wet ingredients.
5. Mix using an electric mixer until combined. Stir in chocolate chips.
6. Pour into prepared pan and bake for 20 minutes (give or take) or until a toothpick inserted into the center comes out clean.
7. Leave to cool in the pan for 10 minutes then transfer onto a cooling rack.
8. Cut generous slices and serve.
